It's the fruit of an annual plant of the Pea family. In the antiquity the 'favus' was a large bean used to cook the 'fava' dish. Later the main ingredient has been replaced with yellow lentils. Extremely tasty, this dish has always represented the main food for all islanders and it is cooked differently according to the season. In the summer it is cooked with a red sauce and capers; in the winter,it is pan-fried with 'kabourma' (smoked pork)

It's a cream cheese, produced by the oldest women of Santorini. unfortunately it's were hard to find it in both tavernas and restaurants; look for it in a free market, it's worth a try!

To eggplants' lovers, this one is known as 'the apple of love'. It has a round shape, completely white, sweet, juicy and rather delicious. The origins of this fruit probably date back to 4000 years ago, when it was imported from the South-East Asia.
